Hi Toni! Thanks for stopping by my blog. We are a family of 4, so a lot of these meals can stretch to a family of 6. We almost always have leftovers, that we eat later in the week, or that dh takes to work. (When he remembers) :-) The waffles are store bought. I definitely am not a morning person to have to fiddle with making anything. I try to get Eggo Waffles BOGO all the time. I am trying to also get into the habit of making pancake batter up the night before, and putting it in the fridge. That way I can make pancakes the next day and it costs a lot less...and has more whole foods (less preservatives in it). I suppose I could do that with the waffle batter too. I never thought of that! Anyway...there is my long winded answer to your questions! Aren't you glad you asked? LOL!

Thanks for the response, one more question... would you mind posting the recipe you use for the make ahead pancake batter? I am not a morning person, at least not in this season of my life and am always looking for easy, cheap, and healthy breakfast ideas.
